Eco-innovative Technologies for Extraction of Proteins for Human Intake from Renewable Protein Sources of Plant Origin
Abstract: Background: The requirement for eco-friendly andsustainable sources of proteins is growing. Diets including more plant protein are increasing due to several factors: the unfavorable environmental impacts of animal protein production, the increasing vegetarianism and veganism trends, and insufficient customer acceptance of food grade insects. Scope and method: This paper connects the isolation of valuable proteins from sustainable sources– spin-offs from processing industry of plant origin andeco-innovative technologies which are emerging for this function (electrostatic separation, subcritical waterextraction, reverse micelles extraction, aqueous two-phase systems extraction, enzyme-, microwave-, ultrasound-, pulsed electric energy- and high pressure-assisted extraction).
